Avocado-Toast with smoked salmon and rhubarb

It’s time for something salty, the “sweet” flavor is clearly dominating our blog at the moment. But to be honest – there are just too many sweet temptations, right? But not only, because this bread also knows how to seduce your taste buds. With a creamy layer of avocado topped with smoked salmon and – we can’t go straight from 100 to 0, eh? – baked vanilla rhubarb. What started as an attempt knocked the gourmet Fabio off his socks – woolen socks, just to say, this cold is terrible – that in the end, the recipe made it just like this on the blog.

First look: rhubarb again?

… first sentence: “Oh my God, can’t we prepare that more often?” Ha – got you. With rhubarb. What the hot-blooded, sun-kissed Sicilian only knew from hearsay, is now pretty often on the tavola: rhubarb. Season and so on. You know. Traditionally, rhubarb shouldn’t be eaten after June 24th because the content of harmful oxalic acid increases too much. By the way: the redder the stems, the less acid it contains. So: pink makes sense! Whether nature always adheres to deadlines or not remains questionable, but we still have time until the time comes anyway.

Yes? Then let’s get straight into the kitchen, quickly preparing this beauty in the hope, that it will knock your socks off. Just like that.

Avocado-Toast with smoked salmon and rhubarb

This toast is not only beautiful to look at, but also really tasty and healthy. Soft spring colors give your mood a nudge in the right direction, while the good fats from salmon and avocado keep your belly full for a long time. The sweet and sour rhubarb gives the whole thing the final taste kick.

Ingredients

  • 2 slices bread in unserem Falle Dinkel-Sauerteigbrot
  • 4 slices smoked salmon
  • 1 tsp chopped pistachios
  • 1 pinch fleur de sel
  • 1 pinch dill, chopped

avocado cream

  • 1 avocado
  • 1 lemon
  • salt, pepper

vanilla baked rhubarb: recipe here

  • 2 tbsp of the freshly baked rhubarb

Instructions

  • Prepare the baked vanilla rhubarb according to this recipe. The specified amount is too much for those sandwiches, but never mind, it tastes just as delicious on its own – as a dessert, for example. Otherwise you can cut the recipe in half or even quarter.
  • Halve the avocado, remove the stone, place the pulp in a bowl and season with a few squirts of lemon juice, salt and pepper.
  • Brush the bread slices generously with the avocado cream, top with the salmon and the rhubarb. Sprinkle with dill, chopped pistachios and a few flakes of fleur de sel.
  • Buon appetito.
